Ingredients

For the Blueberry Sauce

  • ½ cup fresh or frozen blueberries
  • 1 tbsp sugar
  • 1 tsp lemon juice
  • 1 tbsp water

For the Cheesecake Cream

  • 3 tbsp cream cheese, softened
  • 2 tbsp heavy cream
  • 1 tbsp milk
  • 1 tbsp powdered sugar
  • ¼ tsp vanilla extract

For the Iced Coffee

  • 1 cup chilled milk
  • 1 to 2 shots of espresso, cooled
  • 1 to 2 tsp sugar or sweetener, optional
  • Ice cubes

For Garnishing

  • Blueberry sauce
  • Whipped cream, optional
  • A few fresh blueberries
  • Crushed digestive biscuits or graham crackers

How to Make It

1. Make the Blueberry Sauce

Add blueberries, sugar, lemon juice, and water to a small saucepan.

Cook over medium-low heat for about 5 to 7 minutes, stirring occasionally, until the blueberries soften and release their juices.

Lightly mash the berries and cook until the mixture becomes slightly syrupy. Let it cool completely.

2. Prepare the Cheesecake Cream

In a bowl, beat the softened cream cheese until smooth.

Add heavy cream, milk, powdered sugar, and vanilla extract. Whisk until creamy and slightly thick.

You want it smooth and spoonable rather than extremely stiff.

3. Prepare the Coffee

Brew 1 to 2 shots of espresso and allow them to cool.

Fill a tall glass with ice. Add the chilled milk and cooled espresso.

Add sugar or sweetener if you prefer a sweeter coffee and stir well.

4. Add the Blueberry Cheesecake Layer

Spoon some blueberry sauce around the inside of the glass and let it slowly slide down the sides.

Pour in the iced coffee.

Gently spoon the cheesecake cream over the top.

Finish with a little more blueberry sauce, fresh blueberries, and crushed digestive biscuits or graham crackers.

Final Tip

For the best flavor, don't mix everything together immediately. Take a sip through the creamy cheesecake layer first, then stir the drink slightly so the blueberry, coffee, and cream come together.

If you want a stronger coffee flavor, use two espresso shots. For a more dessert-like version, add a little extra cheesecake cream and blueberry sauce.
