If you love classic tiramisu but want something lighter, fruitier, and perfect for warmer days, Strawberry Tiramisu is worth trying. It keeps the soft, creamy layers of traditional tiramisu but replaces the strong coffee and cocoa flavors with juicy strawberries, vanilla, and a fresh strawberry syrup.
The result is a beautiful no-bake dessert with soft ladyfingers, creamy mascarpone, and sweet strawberries in every bite. It is also surprisingly easy to prepare and tastes even better after chilling.
Ingredients
For the Strawberry Layer
- 400 g fresh strawberries
- 3 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Mascarpone Cream
- 250 g mascarpone cheese
- 250 ml heavy whipping cream, chilled
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
For the Tiramisu
- 24 to 30 ladyfinger biscuits
- ½ cup strawberry syrup or strawberry juice
- Fresh strawberries for layering and decoration
- Powdered sugar, optional
How to Make Strawberry Tiramisu
1. Prepare the Strawberries
Wash and remove the tops from the strawberries.
Slice about two thirds of them and keep the remaining strawberries aside for decoration.
Add the sliced strawberries to a bowl with sugar, lemon juice, and vanilla extract. Mix gently and let them sit for around 15 to 20 minutes.
The strawberries will release their natural juices, creating a delicious syrup.
2. Make the Strawberry Syrup
Transfer the strawberry mixture to a blender and blend until smooth.
If you prefer some texture, blend only half of the mixture and leave the rest of the strawberries sliced.
Set the strawberry sauce aside to cool.
3. Prepare the Mascarpone Cream
Add the chilled heavy cream and powdered sugar to a large bowl.
Whip until soft peaks form.
In another bowl, gently whisk the mascarpone with vanilla extract until smooth.
Fold the whipped cream into the mascarpone mixture gradually. Be gentle while mixing so the cream stays light and fluffy.
You should have a smooth, thick, and creamy filling.
4. Dip the Ladyfingers
Pour the strawberry syrup into a shallow bowl.
Quickly dip each ladyfinger into the syrup.
Do not soak them for too long because they can become mushy. A quick dip is enough.
5. Build the First Layer
Arrange the soaked ladyfingers in the bottom of a rectangular dish.
Spread a layer of mascarpone cream over the biscuits.
Add a layer of sliced strawberries.
6. Repeat the Layers
Add another layer of strawberry dipped ladyfingers.
Spread the remaining mascarpone cream over the top.
Finish with fresh sliced strawberries.
For an extra attractive finish, arrange thin strawberry slices around the surface or place whole strawberries in the center.
7. Chill
Cover the dish and refrigerate for at least 4 hours.
For the best texture and flavor, leave it overnight.
The ladyfingers will soften while absorbing the strawberry flavor, creating that classic tiramisu texture.
How to Serve
Take the tiramisu out of the refrigerator just before serving.
Cut it into squares and garnish with:
- Fresh strawberries
- A light dusting of powdered sugar

- White chocolate shavings
