How to Make Quinoa Black Bean Stuffed Peppers

Step 1: Prepare the Peppers

Preheat your oven to 190°C (375°F).

Wash the bell peppers and cut them in half lengthwise. Remove the seeds and membranes.

Arrange the pepper halves cut-side up in a lightly greased baking dish.

Tip: If you prefer whole stuffed peppers, simply cut off the tops and remove the seeds. They may need a few extra minutes in the oven.

Step 2: Prepare the Filling

Heat the olive oil in a large skillet over medium heat.

Add the chopped onion and cook for about 3 minutes, until it begins to soften.

Add the garlic and cook for another 30 seconds.

Now add the tomatoes, corn, black beans, cumin, smoked paprika, chili powder, oregano, salt, and black pepper.

Cook for 4–5 minutes, stirring occasionally.

Step 3: Add the Quinoa

Add the cooked quinoa to the skillet and mix everything together.

Cook for another 2 minutes so the quinoa absorbs the spices and flavors.

Turn off the heat and stir in the lime juice and fresh cilantro.

Taste the filling and adjust the seasoning. If you like a little extra heat, add more chili powder or hot sauce.

Step 4: Fill the Peppers

Spoon the quinoa and black bean mixture generously into each pepper half.

Don't worry about packing the filling too tightly. Keeping it slightly loose allows the heat to move through the filling evenly.

Sprinkle shredded cheese over the top of each pepper.

Step 5: Bake

Cover the baking dish loosely with aluminum foil and bake for 20 minutes.

Remove the foil and continue baking for another 8–10 minutes, or until the peppers are tender and the cheese is melted and lightly golden.

For extra browning, you can place them under the broiler for the final 1–2 minutes. Keep a close eye on them.

Step 6: Add Your Toppings

Remove the peppers from the oven and let them cool for a few minutes.

Top with fresh cilantro, avocado, salsa, jalapeños, or a spoonful of Greek yogurt.

Finish with a squeeze of fresh lime juice and serve warm.

Can You Make Stuffed Peppers Ahead of Time?

Absolutely.

Prepare the quinoa and black bean filling up to 2 days in advance and store it in the refrigerator.

When you're ready to cook, fill the peppers, add the cheese, and bake as directed.

You can also assemble the entire dish several hours before dinner and keep it refrigerated until you're ready to bake.

If baking directly from the refrigerator, you may need to add approximately 5–10 minutes to the cooking time.
