  • 1 teaspoon vanilla extract
  • ½ cup thick caramel sauce

  • Whipped cream, optional

How to Make Instant Salted Caramel Cheesecake

Step 1: Prepare the Biscuit Base

Place the digestive biscuits in a food processor and pulse until they become fine crumbs.

If you don't have a food processor, place the biscuits in a sealed bag and crush them with a rolling pin.

Transfer the crumbs to a bowl.

Add the melted butter, brown sugar, and a small pinch of salt.

Mix until the crumbs resemble wet sand.

Step 2: Press the Crust Into the Pan

Line the bottom of a 20 cm (8-inch) springform pan with parchment paper.

Pour the biscuit mixture into the pan.

Use the back of a spoon or the bottom of a glass to press it down firmly and evenly.

Pay particular attention to the edges so the crust doesn't crumble when the cheesecake is sliced.

Place the crust in the refrigerator while you prepare the filling.

Step 3: Prepare the Creamy Filling

Place the softened cream cheese in a large mixing bowl.

Add the powdered sugar and vanilla extract.

Beat until smooth and creamy.

Make sure there are no large lumps before moving on to the next step.

Step 4: Whip the Cream

In a separate chilled bowl, whip the heavy cream until it reaches soft to medium peaks.

Be careful not to over-whip it.

The cream should be thick and fluffy but still smooth.

Step 5: Combine the Filling

Gently fold the whipped cream into the cream cheese mixture.

Add the caramel sauce and sea salt.

Fold everything together until evenly combined.

Avoid mixing too aggressively because you want to keep some of the air from the whipped cream.

Taste the filling.

If you prefer a stronger salted caramel flavor, add another small pinch of sea salt.

Step 6: Fill the Cheesecake

Remove the biscuit crust from the refrigerator.

Spoon the cheesecake filling over the crust.

Use a spatula to smooth the surface.

Gently tap the pan against the countertop once or twice to remove any large air pockets.

Step 7: Add the Caramel

Warm the caramel sauce very slightly if it is too thick to drizzle.

Spread or drizzle the caramel over the top of the cheesecake.

For a simple decorative effect, use a spoon to create thin caramel swirls across the surface.

Finish with a light sprinkling of flaky sea salt.

Don't use too much salt. The goal is to enhance the caramel rather than overpower it.

Step 8: Chill

Cover the cheesecake and refrigerate for at least 2 hours.

For the firmest texture and cleanest slices, chilling it overnight is even better.

Once fully chilled, carefully remove the cheesecake from the springform pan.

Slice with a sharp knife and serve cold.

Tips for the Perfect Salted Caramel Cheesecake

Use Full-Fat Cream Cheese

Full-fat cream cheese gives the cheesecake its rich and creamy texture. Lower-fat versions can produce a softer filling.

Soften the Cream Cheese

Allow the cream cheese to come to room temperature before mixing. This makes it much easier to achieve a smooth, lump-free filling.

Keep the Whipped Cream Cold

Cold heavy cream whips more easily and creates a lighter cheesecake filling.

Don't Overmix

Once you add the whipped cream, gently fold rather than vigorously beating the mixture.

Give It Enough Time to Chill

The cheesecake needs time to firm up. If you cut it too early, the filling may not hold its shape properly.

Use Flaky Sea Salt

Fine table salt can easily become too intense. Flaky sea salt gives you little bursts of saltiness without overwhelming the caramel.

How to Make Homemade Caramel Sauce

If you don't have store-bought caramel sauce, you can make a quick version at home.

Ingredients

  • ½ cup granulated sugar
  • 2 tablespoons water
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt

Method

Add the sugar and water to a saucepan over medium heat.

Allow the sugar to dissolve and continue cooking without stirring until it turns a deep golden amber color.

Carefully add the butter and whisk.

Slowly pour in the cream while whisking continuously.

Add vanilla and sea salt.

Allow the caramel to cool before using it in the cheesecake.

Be extremely careful when adding the cream because hot caramel can bubble vigorously.

How to Get Clean Cheesecake Slices

Want those neat bakery-style slices?

Try this simple trick.

Dip a sharp knife into hot water.

Dry it thoroughly and slice the cheesecake.

Wipe the knife clean and repeat for every slice.

The warm knife will glide through the creamy filling and create much cleaner edges.

What to Serve With Salted Caramel Cheesecake

This cheesecake is rich on its own, but a few simple additions can make it even more special.

Try serving it with:

  • Extra caramel sauce
  • Whipped cream
  • Toasted pecans
  • Fresh berries
  • Chocolate shavings
  • Vanilla ice cream
  • A small pinch of flaky sea salt
  • Crushed biscuits

A cup of freshly brewed coffee is also an excellent match for the rich caramel flavor.
