Ingredients

For the mushroom topping

  • 250 g mushrooms, finely sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 to 3 garlic cloves, finely chopped
  • 1 small onion or shallot, finely chopped
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon balsamic vinegar, optional
  • 1 tablespoon chopped parsley
  • Chili flakes, optional

For the bruschetta

  • 1 baguette or 4 to 6 slices of crusty bread
  • 1 to 2 tablespoons olive oil
  • 1 garlic clove, optional

Instructions

1. Prepare the bread

Slice the baguette into medium-thick pieces. Brush both sides lightly with olive oil and toast until golden and crisp.

For extra flavor, gently rub a cut garlic clove over the warm toasted bread.

2. Cook the mushrooms

Heat olive oil and butter in a pan over medium-high heat. Add the mushrooms and cook for about 5 to 7 minutes, allowing them to release their moisture and turn golden.

Add the chopped onion and cook for another 2 minutes.

3. Add garlic and seasoning

Stir in the garlic, oregano, salt, black pepper, and chili flakes. Cook for about 1 minute until fragrant.

Add balsamic vinegar if using and let it cook briefly until the mushrooms are glossy and flavorful.

Finish with fresh parsley.

4. Assemble

Spoon the warm mushroom mixture generously over each toasted bread slice.

Serve immediately.

Optional Toppings

You can make this recipe even better with:

  • Crumbled feta
  • Grated Parmesan
  • Cream cheese spread underneath the mushrooms
  • Mozzarella
  • A drizzle of balsamic glaze
  • Fresh basil
  • Truffle oil for a more luxurious version

Quick Tip

The key to great mushroom bruschetta is not overcrowding the pan. This helps the mushrooms brown instead of steaming and gives the topping a deeper, richer flavor.

This version is especially good with a thin layer of cream cheese or ricotta underneath the mushrooms, creating a creamy and crispy contrast.
