If you love buffalo wings but want something lighter and completely vegetarian, these Air Fryer Buffalo Cauliflower Bites are a must-try.
Cauliflower florets are coated in a seasoned batter, air fried until crisp and golden, then tossed in a tangy, spicy buffalo sauce. The result is crunchy on the outside, tender inside, and packed with that familiar buttery buffalo flavor.
They're perfect for game nights, parties, movie nights, evening snacks, or as a fun side dish. And because they're made in the air fryer, you can get that satisfying crispiness without deep-frying.

How to Make Air Fryer Buffalo Cauliflower Bites
Step 1: Prepare the Cauliflower
Wash the cauliflower and dry it thoroughly.
Cut it into bite-sized florets, keeping the pieces relatively similar in size so they cook evenly.
Tip: Make sure the cauliflower is dry before coating it. Excess moisture can prevent the batter from becoming crisp.
Step 2: Make the Batter
In a large bowl, whisk together:
- Flour
- Milk
- Garlic powder
- Smoked paprika
- Onion powder
- Salt
- Black pepper
- Chili powder
Mix until you have a smooth, fairly thick batter.
It should coat the cauliflower without running off immediately.
Step 3: Coat the Cauliflower
Add the cauliflower florets to the batter.
Toss gently until each piece is evenly coated.
For an extra-crispy exterior, transfer the battered cauliflower into a bowl of panko breadcrumbs and gently toss again.
You don't need a heavy coating. A light layer is enough to create a crunchy texture.
Step 4: Preheat the Air Fryer
Preheat your air fryer to 190°C (375°F) for approximately 3 minutes.
Lightly spray or brush the basket with cooking oil.
Arrange the cauliflower in a single layer.
Don't overcrowd the basket. Cook in batches if necessary.
Step 5: Air Fry
Air fry the cauliflower for approximately 15–18 minutes, turning or shaking the basket halfway through.
Cook until the coating is golden brown and crisp.
If you're cooking in batches, the second batch may cook slightly faster because the air fryer is already hot.
Step 6: Make the Buffalo Sauce
While the cauliflower cooks, combine the buffalo hot sauce, melted butter, honey or maple syrup, and garlic powder in a bowl.
Mix well.
Taste the sauce and adjust it according to your preference.
Want it hotter? Add more hot sauce or chili flakes.
Want it milder? Add a little more butter or honey.
Step 7: Toss With Buffalo Sauce
Once the cauliflower is crispy, transfer it to a large bowl.
Pour the buffalo sauce over the cauliflower and toss gently until every piece is coated.
For maximum crispiness, you can return the sauced cauliflower to the air fryer for another 2–3 minutes.
This helps the sauce cling to the coating without making the bites too soft.
Step 8: Serve
Transfer the buffalo cauliflower bites to a serving plate.
Serve immediately with ranch or blue cheese dressing, celery sticks, and carrot sticks.
Finish with chopped parsley or cilantro and an extra drizzle of buffalo sauce.
Tips for Extra-Crispy Buffalo Cauliflower
Dry the Cauliflower Thoroughly
Water is the enemy of crispiness. Pat the florets dry before adding them to the batter.
Don't Make the Batter Too Thin
A thicker batter creates a better coating and helps the breadcrumbs stick.
Avoid Overcrowding
Air needs to circulate around each piece. If the basket is packed, the cauliflower will steam instead of crisping.
Shake Halfway Through
Turning the cauliflower helps it brown evenly on multiple sides.
Sauce Right Before Serving
Buffalo sauce naturally softens the crispy coating. Toss the bites just before serving for the best texture.
How to Make Them Extra Spicy
If you love heat, there are several ways to turn up the spice.
Add:
- Extra buffalo hot sauce
- Cayenne pepper
- Red chili flakes
- Hot paprika
- Finely chopped fresh jalapeño
- A few drops of your favorite hot sauce
For a milder version, increase the butter and honey slightly.
